Bu sabah uyandığımda içimden çocukluğumuzdan kalma bir lezzeti canlandırmak geldi. Beyaz peyniri, doğradığım maydanozları, minik küpler halinde kestiğim domatesi, bol karabiberi, zeytinyağını ve bir yumurtayı karıştırdım bir kabın içinde. Dünden kalmış ekmeği dilimledim, altlarına ufak tereyağı parçaları sürüp fırın tepsisine yerleştirdim dilimleri. Dilimlerin üstüne karışımdan paylaştırdım, üzerlerine birer uzun bacaklı Enoki mantarı koydum. 200 derece ısıdaki fırında 7 dakika kadar tuttum. Kimisi kocaman, kimisi (Shimejiler gibi) öbek öbek, kimisi de upuzun saplı, minnacık şapkalıydı. Onları görünce hemen bir şeyler yapmak istedim. Getirdiği mantarlardan ilk olarak shimeji mantarını (lyphillum shimeji) kullanarak bir yemek yaptım. Mutfağımdan mis gibi kokuları geldikçe güzel tadı olacağı belli olan yemeği biz çok severek yedik.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;İçindekiler:&lt;/div&gt;&lt;div&gt;Shimeji mantarı&lt;/div&gt;&lt;div&gt;Kuzu külbastı (4-5 adet)&lt;/div&gt;&lt;div&gt;1 yeşil biber&lt;/div&gt;&lt;div&gt;1 orta boy soğan&lt;/div&gt;&lt;div&gt;5-6 diş sarımsak&lt;/div&gt;&lt;div&gt;Domates püresi&lt;/div&gt;&lt;div&gt;Tuz, karabiber&lt;/div&gt;&lt;div&gt;Kanola yağı&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Yapılışı:&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1. Tencereye önce kanola yağını alıp kızdırıyoruz. İçine doğranmış soğanları ekleyip soteliyoruz. Bu arada sarımsakları doğrayıp ilave ediyoruz. Kestiğimiz yeşil biberi de ekleyip sotelemeye devam ediyoruz.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;2. Külbastıları da ekleyip arkalı önlü pişiriyoruz. Üzerlerine shimeji mantarlarını bütün olarak koyuyoruz.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3. Domates püresi, tuz ve karabiber koyup, biraz sıcak su ekliyoruz ve kısık ateşte etler yumuşayıncaya kadar pişiriyoruz.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;4. Ekmek piştikten sonra üzerine bu kez tereyağı sürmedim, onun yerine ekmeği fırınlamadan önce biraz un serptim. . Sonuç? Yazın sıcağında değil mutfağa girmek, yemek bile yemek istemiyor canım çoğu zaman. Bu tarifi İtalya'nın güneyinde yaşayan bir arkadaşım vermişti, onun yaşadığı bölgede geleneksel olarak yapılan bir yemek. Hazırlaması pratik, pişmesini beklemek biraz sıkabilir, ama sonuç gerçekten de muhteşem. Etleri bir dövücüyle biraz açın veya satın alırken biraz incelttirin. Ortalarına sarımsak, maydanoz ve parmesan peyniri dilimlerini koyup biraz tuz ve karabiber serpin ve sarma sarar gibi etleri sarın. Etlerin dağılmaması için pişirme ipiyle sıkıca bağlayın etrafını.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;2. Soğanı ve sıvıyağı tencereye alıp soğanlar pembeleşinceye kadar soteleyin. Sonra etleri arkalı önlü hafifçe tencerede çevirin. Üzerlerine domates rendesi ve Artebella Közlenmiş Biber Ezmesi'ni boşaltın.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3. Bu yoğun, sabır gerektiren, emek isteyen uğraşları nasıl tam olarak aktarabilirim, bilmiyorum. Ama fotoğraflarla deneyeceğim bu yıl. Yukarıdaki fotoğrafları ben çekmedim, babam getirmişti Nisan ayında. Bir tanesinde soldaki babam, sağdaki domates üretiminde yıllardır birlikte çalıştığımız Fikret Abi. Diğerlerinde domates için tarla hazırlıkları var.
